Tart Friday



Yesterday afternoon we went to the East Atlanta Village Farm Market.  (We are so very fortunate to have several farm markets each week, in addition to CSA options galore.)

Spring onions are just in, and I bought 2 fine bunches.  
I sliced them, including a lot of the green, and sautéed them till very wilted in a tablespoon or 2 of olive oil.  While they cooled we made an easy crust with half whole wheat and half white, a pinch of salt and a stick of butter.


I rolled the crust and Haley grated some amazing New York Sharp Cheddar that was brought to us by my parents- from the same little farm store that I bought penny and nickel candy in as a child- but I digress.


In the center of the crust I placed a layer of shredded cheese, the onion, raw walnuts and more cheese. I folded the edges over, all very rustic, and baked for about 20 minutes in a hot oven.



Superb.
